Prahova Valley Medium Dry Sparkling Wine
The vineyards at Sebes in Transylvania are situated in one of Romania’s oldest and most renowned regions for its dry white wines. The three grape varieties used in this wine are the result of a superb vintage at Sebes.
Climate / Quality of the soil:
The cooler climate of this region, its altitude (100-600 meters above the sea level), the vicinity of Mures and Secas rivers, the early morning mists and the forest soils (brown and alluvial brown), all ensure a slow ripening of the grapes, thus preserving their delicate aromas and providing the wines with lively acidity.
Winemaking process: (Traditional Method)
Hand harvesting; grapes carefully selected
Addition of yeast
First alcoholic fermentation, in stainless steel tank at controlled temperature; gently pressing
Secondary fermentation for 9 -12 months (horizontally bottles)
Clarification, bottles placed at 45 degrees for 8 weeks
Disgorging all the yeast sediment formed
Corking and final packing
Total acidity: 6.45 g/L
Residual sugar: 32.80 g/L
Three grape varieties contribute to the complexity of blending: Chardonnay for finesse and elegance, Feteasca Regala for refreshing acidity and Riesling for fruitiness. A wine round and suave, with a special charm and sensuality; delicate flavors of honey and citrus flowers. Notes of pineapple and elder flowers.
